INGREDIENTES:

2 cucharadas de aceite de oliva
4 costillas de cerdo (mas o menos de 2cm de espesor)
1 cebolla mediana picada (o cortada en rodajas si así lo prefieren)
1 diente de ajo picado fino
3 pimientos de calahorra horneados y cortados en tiras
2 tomates frescos picados (o en lata)
pimienta negra molida

PREPARACIÓN:

Calentar el aceite en una sartén y dorar las costillas en forma
rápida. Agregar la cebolla y el ajo y cocinar hasta que la cebolla
esté transparente. Agregar pimientos, tomates, sal y pimienta.
Cubrir y cocinar a fuego lento hasta que las costillas estén cocinadas
(unos 15 a 20 minutos). Acompañar con papas hervidas o lo que les
guste.

PIMIENTOS DE CALAHORRA ASADOS:

Estos son los pimientos colorados. Se ponen en una fuente de horno y
se cocinan en un horno a unos 375-400 grados durante 40-60 minutos.
Luego se les quita la piel y las semillas. Se pueden conservar en la
heladera por un par de días.
