Bastones de harina de maíz, jamón ibérico y queso fundido

Ingredientes

2 tazas de harina de maíz instantánea
6 tazas de caldo de verdura
1 diente de ajo
Perejil picado
Jugo de limón
1 taza de queso gruyere rallado
3 berenjenas
Jengibre fresco
1 cucharadita de curry
300 gr. de jamón crudo en fetas
Sal y pimienta

Ingredientes de la salsa

2 cucharadas de azúcar
1 taza de vinagre
1 taza de Ketchup
Hierbas aromáticas frescas
1 cucharadita de pimentón ahumado
1 chile seco

Preparación

Cocinar las berenjenas en la hornalla, girándolas constantemente, dejar enfriar y reducir a puré picándolas con cuchillo, condimentar con sal, pimienta negra y jugo de limón. Reservar. En una olla colocar caldo de verduras, llevar a hervor y agregar la harina de maíz, revolviendo constantemente con cuchara de madera, incorporar el puré de berenjenas, condimentar con ajo, perejil fresco picado, curry en polvo, queso gruyere rallado, jengibre rallado, sal y pimienta negra. Unir todos los ingredientes y volcar sobre una fuente profunda aceitada. Cubrir con papel film y dejar en la heladera por 20 minutos.
Desmoldar y cortar bastones parejos, envolver con fetas de jamón crudo y espolvorear con queso rallado. Llevar a una fuente aceitada cada bastón y gratinar en horno a temperatura fuerte unos minutos, colocar palillos en cada bastón.
Para la salsa, agregar azúcar en una sartén, realizar un caramelo e incorporar vinagre y Ketchup disuelto en 1/2 taza de agua. Condimentar con pimienta negra molida y sal, reducir hasta que la salsa espese. Retirar, dejar enfriar y agregar pimentón, hierbas picadas y chile picado sin semillas. Servir los bastoncitos con la salsa.
