Cappellettis de lenguado y camarones

Ingredientes

500 gr. de harina 0000
5 huevos
1 cucharada de aceite de oliva

Ingredientes del relleno

2 claras
1 kg. de filetes de lenguado
200 gr. de camarones
Ralladura de 1 lima
1 taza de ciboulette picada

Ingredientes de la salsa

500 gr. de puré de tomate
2 cucharadas de aceite de oliva
1 cucharada de manteca
4 dientes de ajo
1 pimiento colorado
1/2 taza de pepinillos en vinagre
1 cebolla colorada
Albahaca fresca
2 limones

Preparación

Armar la harina en forma de corona con una pizca de sal, añadir los huevos y el aceite en el centro. Unir los ingredientes, amasar y cortar discos de 6 cm. de diámetro. Procesar el lenguado y los camarones cocidos, con las claras. Añadir la ciboulette picada y la ralladura de lima, salpimentar. Poner porciones chicas en los discos, humedecer los bordes y armar los Cappelletti. Saltear con aceite de oliva, manteca, 4 dientes de ajos fileteados, rociar con el vino blanco y dejar evaporar el alcohol. Agregar el puré de tomates, salpimentar y cocinar 25 minutos a fuego bajo. Cubetear los pepinillos, el morrón y la cebolla, mezclar colocar en bol con aceite de oliva, jugo de limón, sal y pimienta. Hervir los cappelletti y una vez al dente, saltearlos con la salsa. Agregar albahaca picada, servir con la mezcla de vegetales.
