Ingredientes del Dacquoise

4 claras
210 gr. de azúcar
60 gr. de coco rallado
15 gr. de harina

Ingredientes de la mousse de chocolate

125 gr. de azúcar
50 cc. de agua
7 yemas
300 gr. de chocolate amargo
600 gr. de crema

Ingredientes de sabañón

3 yemas
120 gr. de azúcar
150 cc. de jugo de pomelo
4 hojas de menta picada
12 gr. de gelatina sin sabor
180 gr. de crema

Ingredientes del baño

400 gr. de crema
200 gr. de chocolate
20 gr. de manteca

Preparación

Para el mousse de chocolate hacer un almíbar con el agua y el azúcar, verter sobre las yemas batidas a cinta. Batir hasta enfriar. Fundir chocolate e incorporarlo, añadir la crema batida a chantilly y volcar en un molde cuadrado.
Para la mousse de sabañón, batir a baño de María los ingredientes (yemas, jugo, azúcar menta picada), menos la gelatina y la crema. Enfriar e incorporar la gelatina hidratada en 1/4 vaso de agua tibia, añadir la crema semibatida. Mezclar todo junto y volcar en un molde, reservar.
Para el Dacquoise, batir las claras y azúcar. Incorporar el resto de los ingredientes. Esparcir la preparación sobre una placa cuadrada (del mismo tamaño que la de mousse de chocolate) con papel manteca y hornear a 180º durante 12 minutos. Colocar sobre la mousse de chocolate, la de sabayón y encima el Dacquoise. Llevar a freezer 2 horas y desmoldar de manera que el Dacquoise quede abajo.
Para el baño hervir la crema y el azúcar y volcar sobre el chocolate rallado junto con la manteca, bastir hasta lograr una crema homogénea, cubrir la torta.
