Ingredientes

1 kg. de mollejas
1 limón
1 zanahoria
5 dientes de ajo
1 cebolla
1 rama de apio
1 hoja de laurel
4 tomates
Sal y azúcar
1 pan baguette
500gr. de cebolla
50 gr. de panceta ahumada
80 gr. de manteca
50 gr. de rúcula (verdura cruda)
5 huevos de codorniz
Ralladura de un limón

Preparación

Para blanquear las mollejas, hacer un caldo con el agua y las verduras cortadas en cubos, agregar el limón cortado al medio y las mollejas. Cocinar durante 20 minutos. Sacar las mollejas del caldo de cocción y disponerlas sobre una placa, colocar otra placa encima y colocarle peso para aplastar las mollejas. Reservar.
Para los tomates secos, cortarlos en rodajas finas, colocar las rodajas por separadas en una placa para horno y colocar un poco de sal y azúcar por encima. Deshidratar en horno a 60º por dos horas. Reservar en un frasco con aceite de oliva.
Para los panes crocantes, congelar primero el pan y cortar en láminas. Hornear a 80º hasta que las rodajas estén crocantes.
Para la cebolla confit cortar los 500 gr. de cebolla en juliana, la panceta ahumada en bastones y confitar junto con la manteca a fuego bajo por 40 minutos.
Cortamos las mollejas blanqueadas en láminas y las cocinamos en una plancha (sartén) o parrilla hasta que se doren. Por otro lado freír los huevos de codorniz en aceite de oliva. Disponemos cuatro rodajas de pan crocante y las mollejas por encima de cada pan. Colocar rúcula y tomates secos en el primero, la cebolla confit y la panceta en el segundo, los huevitos en el tercer y la ralladura de limón en el cuarto.
