Beat 4 egg whites with a pinch of salt for 5-6 minutes until *stiff*.
Gradually add 8oz (1 cup) of sugar. Add 1 teaspoon of vanilla essence
and beat until *stiff*. Fold in 1 level desert spoon of corn flour.
Put mixture onto a greased oven tray, sitting about 1 1/2 inches high.
NB: you should eventually end up with a round cake.
Using electric oven:
preheat to 400 degrees Fahrenheit then *reset* to 250 degrees
Fahrenheit and bake undisturbed for 1 hour.
Woola, Pavlova! Usually served with cream and kiwifruit on top.
