Peceto a la crema de mostaza

Ingredientes (para 6 personas)

1 1/2 kg. de peceto
100 gr. de manteca
2 cucharadas de mostaza
1/4 litro de leche
Sal y pimienta, a gusto
1 cucharadita de fécula de maíz
Aceite cantidad necesaria

Preparación

Poner en remojo en leche el peceto, durante 2 horas, aparte, preparar una crema con la manteca y la mostaza. Retirar la carne de la leche y frotar el peceto con la crema de preparada. Colocar en una asadera con un poco de aceite y cocinar con horno moderado durante 1 1/2 hora. Después de 1/2 hora de cocción, retirar del horno, condimentar con sal y pimienta y volcar encima la mitad de la leche en que se remojo la carne, introducir de nuevo en el horno y, al retirar para servir espesar un poco la salsa con la maicena disuelta en 1/4 taza de leche fría. Acompañar con papas al natural, bañadas con la salsa de la carne.
