Pechugas rellenas, rebozadas en croute de harina de maíz

Ingredientes

4 supremas de pollo
150 gr. de jamón cocido en fetas
2 pimientos rojos
2 zucchine
4 rodajas de pan de campo
2 dientes de ajo
4 cucharadas de pan rallado
2 cucharadas de harina de maíz
2 cucharadas de semillas de zapallo
2 huevos
1/2 taza de leche
Sal y pimienta a gusto

Preparación

Colocar en una sartén, sin materia grasa las semillas de zapallo, harina de maíz, llevar a fuego mínimo y saltear durante 10 minutos. Retirar y procesar. Retirar la corteza de pan de campo, rociar con aceite de oliva, frotar con ajo y tostar en el horno, procesar con la preparación anterior hasta reducir a polvo. Reservar.
Quemar los pimientos sobre la hornalla, envolver con papel y pelar, quitar las semillas. Cocinar los zucchinis cortados en láminas sobre una plancha y grillar de ambos lados.
Abrir las supremas sin separarlas por completo, salpimentar y cubrir con jamón crudo, zucchinis y morrones ahumados, arrollar una por una, salpimentar y envolver en papel aluminio, formar cilindros compactos. Colocarlos en una fuente cubrir con un poco de agua y cocinar con horno a temperatura alta por 20 minutos. Retirarlos del horno, sacar el papel y pasarlos por huevo batido y leche, sazonar con sal, pimienta y ajo picado. Rebozar las supremas en el polvo procesado y pan rallado, colocarlos en una fuente y cocinar en el horno hasta dorar.
