Ingredientes I

1 provoleta
1/2 cucharada de aceite de oliva
1 rodaja de queso provolone
Sal y pimienta, a gusto
Ají molido
Orégano seco
Rodajas de tomates secos hidratados
Hojas de albahaca fresca
Láminas de ajo
Alcaparras en láminas
Aceto y aceite de oliva

Ingredientes II

1 provoleta
Láminas de panceta ahumada
Hojas de rúcula
1 cebolla colorada
Almendras tostadas fileteadas
2 cucharadas de vinagre de vino blanco
Aceite de maíz
Mostaza y miel

Preparación I

Colocar el aceite en una cazuelita de barro individual, la provoleta, por la rodaja de queso provolone, condimentar con sal, pimienta, Ají molido y orégano seco. Llevar a la parrilla y dorar de un lado con las brasas, la parte inferior de la provoleta, girarlas y colocar sobre ella, rodajas de tomates secos hidratados, alcaparra albahaca, ajos condimentar con aceite de oliva y aceto.

Preparación II

Cocinar a fuego bajo, láminas de panceta ahumada, en la parrilla hasta que estén crocantes, dejarlas enfriar y romperlas groseramente, mezclar con las hojas de rúcula, la cebolla colorada en juliana, almendras tostadas fileteadas. Condimentar con una vinagreta de vinagre blanco, aceite de maíz, mostaza y miel. Cubrir la provoleta cocida en la parrilla y terminar de cocinar.
