Ingredientes

200 gr. de harina de maíz blanco
3 cucharadas de aceite de girasol
1 pizca de sal
Agua fría

Ingredientes del relleno

1 morrón rojo
1 cebolla colorada
1 berenjena
1 zucchini
2 puerros
100 gr. de hongos
Ciboulette picada
1 chile
Sal y pimienta negra

Preparación

Para la masa formar una corona con la harina, en el centro colocar el aceite, la sal y unas cucharadas de agua fría. Trabajar hasta formar una masa consistente Incorporar agua si fuera necesario. Dejar reposar y estirar hasta lograr rectángulos de 30 x 20 cm. aproximadamente.
Para el relleno saltear en un wok el morrón cortado en juliana de tiras finas, la cebolla en láminas, los zucchini en cubos y las berenjenas en tiras finas. Cocinarlas con fuego bien alto, dejando 1 minuto entre la cocción de cada vegetal y siguiendo el orden anterior. Por último incorporar los hongos cortados en cuartos. Salpimentar, condimentar con chile picado y la ciboulette picada. Colocar parte del relleno sobre rectángulo de masa, arrollarlo y cerrarlo con un palillo. Freír los tacos en aceite caliente, Cuando estén dorados, retirarlos y colocarlos sobre papel absorbente. En el momento de servir, cortarlos por la mitad y al bies. Servirlos acompañados con una ensalada de maíz hervido, endibias en tiras y hojitas de apio, aderezada con una vinagreta.
