Tapa de nalga sobre vegetales

Ingredientes

1 tapa de nalga de 2 kg.
Sal gruesa, a gusto
1 taza de aceite de maíz
Romero fresco
Orégano fresco
3 dientes de ajo
Granos de pimienta verde
6 cebollas de verdeo
300 gr. de hongos
2 cebollas coloradas
Ralladura de cáscara de limón
Aceite de oliva
Sal y pimienta

Preparación

Colocar la tapa de nalga en un recipiente profundo, cubrir con aceite de maíz, ajos machacados, granos de pimienta verde, romero y orégano. Dejar reposar en la heladera durante 4 horas como mínimo. Girar de tanto en tanto para que tome sabor. Retirar y espolvorear con sal gruesa, Sellar en una plancha grande y terminar la cocción en horno moderado. Cortar las cebollas de verdeo en trozos, las cebollas coloradas en cuartos y los hongos en mitades. Pincelar con aceite, salpimentar y cocinar en una plancha hasta dorar. Condimentar con ralladura de limón, sal y pimienta. Servir la tapa de nalga cortada en rodajas sobre los vegetales.
