Tarteletas dulces, rellenas

Ingredientes de la masa de tarteletas caseras

100 gr. de manteca
1 yema
2 cucharadas de azúcar
2 cucharadas de agua fría
1 cucharada de vinagre
1 taza de harina común

Ingredientes del relleno

250 gr. de leche
Cáscara de 1 limón
2 yemas
4 cucharadas de azúcar
2 cucharadas de fécula de maíz
1 cucharada de jugo de limón
8 tarteletas medianas compradas
Frutas de estación
2 o 3 cucharadas de gelatina de durazno

Preparación

En una cacerolita caliente la leche con la cáscara de limón, tape deje entibiar y retire la cáscara. En un bol, trabajar las yemas con el azúcar hasta obtener una crema clara, agregar la fécula de maíz, diluida con la leche tibia. Pasar la preparación a una cacerolita y dejar espesar mezclando con batidor de alambre para que no se forme nata en la superficie, añadir el jugo de limón y dejar enfriar. Distribuir la crema en las tarteletas. Disponer sobre ellas fruta de estación cortadas en fetas y pincelar con la gelatina de durazno, disuelta sobre el fuego.
Para las tarteletas, disponer la manteca sobre la mesa y los ingredientes, unir todo e incorporar la harina, formar un bolo liso, estirar y forrar moldes de tarteletas, cocinar hasta que estén secas, en horno moderado unos minutos.
